The pineapples that Boon uses are the "Pattavia" variety, which is grown in the Khao Sam Roi Yot area. This area is located near the sea, which makes the freshwater slightly salty. This gives the fruits and pineapples in that area a unique flavor that is both sour and sweet. The pineapples from Khao Sam Roi Yot are also known to be tastier than pineapples from other areas. We have carefully selected this variety from Khao Sam Roi Yot because it has the best flavor and is suitable for making dried pineapple.
